String cheese making in Slovakia

String cheese is made per original recipe, by hand-pulling steamed sheep’s cheese into long strings which are then cut and braided to form a small “whip”, hence the Slovak name “Korbacik” (whip).  String cheese can be smoked or unsmoked. This salty, mozzarella-like cheese product is unique to Orava region of northern Slovakia.
